What happens when the trial ends?

The product asks for a subscription key on its Setup page to keep running after the 30 days. Throughout the trial, your data stays on your own machine.

Do AI settings change the price?

Your quote covers it. If you use cloud AI (Claude, ChatGPT or Gemini), it also sets out how that provider’s usage is billed.
